Glyceryl monostearate (GMS, E471) used as an emulsifier in food and cosmetics and as an antistatic additive in plastics.
Glyceryl monostearate is a nonionic emulsifier obtained by esterifying glycerin with stearic acid. It is used in the food industry under the code E471 as a texture modifier in products such as bread, margarine and ice cream, in cosmetics as a cream/lotion emulsifier, and in plastic packaging as an antistatic/antifog additive. GMS 40% is a mixture of mono- and diglycerides containing approximately 40% monoester. The 90% grade, by contrast, is a purified monoester.
