Natural phospholipid mixture obtained from soybean oil and used as an emulsifier in food production.
Soy lecithin is a natural mixture of phospholipids separated during the refining of crude soybean oil (it contains phosphatidylcholine, phosphatidylethanolamine and phosphatidylinositol). The food-grade form (E322) is used as an emulsifier/flow agent in chocolate, margarine, baking and bakery product manufacturing. It is supplied as a flowable, viscous liquid.
