Xanthan gum is a polysaccharide produced by fermentation of the bacterium Xanthomonas campestris. It is used in the food industry as a thickener, stabilizer and emulsifier (E415), and in industrial applications such as cosmetics, pharmaceuticals and drilling fluids as a rheology modifier.
