Chelating agent that binds calcium and metal ions in water-based systems.

Sodium gluconate is a biodegradable chelating agent that is the sodium salt of gluconic acid. It is used as a set retarder in concrete admixtures and as a complexing agent in cleaning products and metal surface treatment. It is also used as an additive in the food and beverage industry.
