Citric acid is an organic acid with three carboxyl groups that occurs naturally in citrus fruits and is commercially produced mostly by fermentation. Its water-free (anhydrous) form is a white crystalline powder. It is used as an acidity regulator and preservative in the food and beverage sector, as a descaler/complexing agent in cleaning products and as a pH adjuster in cosmetics.
